Vegan Chocolate Brownies

So chocolate comes from cocoa. And cocoa is a tree, which makes it a plant! So basically, chocolate is salad and kinda healthy. Or so I’ve heard. 😉

Anyway, there’s nothing better than a fresh slice of a brownie with a glass of almond milk or a scoop of vegan vanilla ice cream.

And who can say no to brownies?! Especially when they are not only easy to whip up but are also
super decadent, delicious and refined sugar-free. (Pssst: the main ingredient ist…zucchini! But you would never guess that, because of it’s rich and chocolatey flavour!)

So without further ado, here’s what you’ll need to make those incredibly fluffy, tender brownie bites!

Ingredients:

Brownies:

  • 400 g zucchini (shredded)
  • 100 g coconut oil
  • 260 g spelt whole wheat flour
  • 100 g coconut sugar
  • 1 tbsp backing powder
  • 1 tbsp ground vanilla powder
  • 3 tbsp chia seeds
  • 3 tbsp organic sugar free cocoa powder
  • 1 tsp cinnamon
  • a splash of lemon juice
  • a pinch of salt
  • a handful of vegan chocolate chips

Chocolate Gaze (optional):

  • 150 g organic dark vegan chocolate
  • 1 tbsp organic coconut oil
  • a splash of unsweetened almond milk

Let’s get baking!

Make the brownies:

  • Preheat the oven to 180 degrees and slightly grease your baking dish
  • Start shredding the zucchini
  • Place the ingredients in a mixing bowl and blend with a stand mixer until well combined
  • Fold in the chocolate chips
  • Pour the batter into your greased baking dish and even out the mixture
  • Bake the brownies for about 35-40 minutes
  • Let them cool completely

Tip: You can use a toothpick to make sure that your brownies are ready. Simply insert it in the center of the brownies. If it comes out clean, they are ready to be taken out of the oven.

& for the chocolate gaze:

  • In a small saucepan, melt the chocolate and coconut oil over very low heat
  • Gradually add almond milk, stir until evenly combined and remove from heat
  • Drizzle the glaze on the brownies and let it sit for about an hour before serving
