Vegan Apple Muffins

I love recipes that are quick and easy to make, healthy and also super delicious!

These apple muffins are the best example for that! They not only taste heavenly good, they are also very easy to bake! Yumm!

As regards taste, they reminiscent of apple crumble: Fruity, light, crunchy but still super soft.

To put it in a nutshell: You have to try them! 🙂

Ingredients:

  • 160g whole spelt flour
  • 40g coconut sugar
  • 2 tbsp chia seeds
  • 1 tsp vanilla powder
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 30g ground almonds
  • 1 pinch salt
  • 1 tsp backing powder
  • Juice of 1 lemon
  • 4 tbsp coconutoil
  • 100 ml oatmilk
  • 50 ml water
  • 2 apples

Let’s bake:

  • Preheat the oven to 190C
  • In a bowl, mix together the dry ingredients
  • Afterwards, whisk together lemon juice, oil, water, oatmilk and the dry ingredients until everything is well combined
  • Wash and core your apples – then cut into little pieces
  • Lastly, add apple slices to the batter and mix quickly
  • Line baking dish with parchment paper and divide batter evenly between muffin tins
  • Let the muffins bake for about 20-25 minutes, take them out of the oven and let them cool for a few minutes before you take them out of the pan

That’s it!
